Pinot Grigio Delle Venezie Paladin is a still white made exclusively from Pinot Grigio grapes, produced in the Venezie area. It displays a fresh, linear style, with a delicate aromatic profile and medium structure suitable for everyday meals. White vinification and aging in steel retain aromatic clarity and provide a smooth, pleasant sip.
Where it comes from
The Pinot Grigio grapes originate from Paladin's vineyards near Annone Veneto, in the province of Venice. The area enjoys a temperate climate with good temperature swings thanks to the proximity of the Adriatic and the presence of waterways. Alluvial soils rich in sand and silt promote even ripening and enhance freshness and aromatic purity.
How it is made
Processing starts with gentle pressing of the grapes and immediate separation of the must from the skins for a white vinification focused on finesse. Fermentation takes place in stainless steel tanks at a controlled temperature to preserve the varietal characters. Aging continues in steel for several months, possibly with lees stirring, giving the wine greater roundness without weighing down the profile.
Tasting notes
Visually, the color is straw yellow with greenish highlights. The aroma has medium intensity with notes of acacia flowers, pear and white-fleshed fruit, with a hint of citrus. On the palate it is dry and fresh, shows balanced structure and finishes with a savory note that invites another sip.

This Pinot Grigio pairs well with fish dishes, shellfish and fish soups, thanks to its freshness and restrained aromatic profile. It is also ideal with savoury crepes, white meats and light mains, as it enhances the juiciness of the dishes without overpowering the flavors.
