What kind of wine it is

Volpe Pasini's Ribolla Gialla is a white wine from Friuli-Venezia Giulia made from Ribolla Gialla grapes. Vinification in stainless steel at controlled temperature preserves the primary aromas and the precision of flavor. After aging in the bottle, the wine appears fresh and linear, with fruity and floral notes. Its medium structure and balance make it versatile, suitable both as an aperitif and with light dishes.

Where it comes from

The grapes come from vineyards located in the municipality of Torreano, in the eastern part of Friuli. The area's vineyards contribute to the identity of Ribolla Gialla. This context expresses the character of the grape variety in a modern way.

How it is produced

Grapes are harvested by hand selection to protect their quality and integrity. The must ferments in stainless steel at a controlled temperature, thus limiting oxidation and preserving aromatic definition. Aging takes place in the bottle.

Tasting notes

In appearance, it is straw yellow with greenish reflections. On the nose, peach and apple notes emerge, with delicate white flower hints and a slight citrus nuance. On the palate, it is fresh and lively, with balanced acidity and a light texture leading to a clean and persistent finish. The profile remains harmonious, with returning fruity notes and a dry closure.

Food pairings

Its freshness suits it well as an aperitif and with white fish and shellfish dishes. It pairs nicely with carpaccio, fish tartare, prawn risotto, and light preparations with aromatic herbs. Regionally, it accompanies boreto alla graisana and fried fish. With fresh cheeses, it maintains balance and flavor clarity.

When to serve it

It is enjoyed on informal occasions and at mealtimes, ideal from aperitif through to seafood main courses. Serve it chilled, between 8 and 10 °C, in a medium-sized glass to enhance its fruity and floral notes. Intended for young drinking, it is at its freshest in the first years. If well stored, it maintains aromatic precision over time.
