Description
The Dogliani Superiore Pirochetta by Cascina Corte is a red wine made from Dolcetto grapes sourced from the historic "Pirochetta" vineyard, planted in 1946 and located at 480 meters above sea level with south/southeast exposure. The calcareous, tuffaceous, and clay soils, along with the advanced age of the vines, contribute to this wine’s complexity and depth.
The grapes are hand-harvested in the second half of September. In the cellar, fermentation occurs naturally without added yeasts, with manual pump-overs and no filtration or fining. The wine is aged for 18 months in both steel and cement, followed by a further year in the bottle.
In the glass, it displays a purple-red color with ruby-violet highlights. On the nose, it offers a deep and upward bouquet, with fruity aromas of cherries, plums, and currants, enriched by spicy and licorice notes. On the palate, it is assertive and characterful, with smoothness and roundness balanced by pronounced tannins. The finish is long and persistent, highlighting its remarkable aging potential.
Thanks to its structure and personality, it pairs perfectly with flavorful meat dishes, soups, charcuterie, and cheeses.
