Description
The Dogliani Superiore Pirochetta from Cascina Corte is an organic red wine made from Dolcetto grapes sourced from the historic "Pirochetta" vineyard, planted in 1946 at an altitude of 480 meters with a south/southeast exposure. The calcareous, tuffaceous, and clayey soil, along with the advanced age of the vines, contributes to the complexity and depth of this wine.
The manual harvest takes place in the second decade of September. In the winery, fermentation occurs naturally without the addition of yeasts, with manual pumpovers and without filtration or clarification. The wine ages for 18 months between steel and cement, followed by an additional year in the bottle.
Visually, it presents a purple-red color with ruby-violet reflections. On the nose, it offers a deep and vertical bouquet, with fruity aromas of cherries, plums, and blackcurrants, enriched by spicy notes and hints of licorice. On the palate, it shows determination and character, with a smoothness and roundness balanced by evident tannins. The finish is long and persistent, highlighting its excellent aging potential.
Thanks to its structure and personality, it pairs perfectly with flavorful meat dishes, soups, cold cuts, and cheeses.
