What kind of wine it is
Etna Bianco Alta Mora di Cusumano is a white wine made from 100% Carricante grapes, with a supple, fresh profile and a long finish.
Where it comes from
The grapes are trellis-trained across about 8 hectares of vineyards stretching along the contrada Praino in the municipality of Milo, and on the lands of the contrada Verzella in Castiglione di Sicilia.
How it is made
Harvesting is carried out entirely by hand in mid-October. After a gentle pressing of the bunches, the must ferments in stainless steel at 18-20°C, remaining in the same tanks for four months on its fine lees, then further ageing in bottle before release.
Tasting notes
In the glass it shows a straw yellow color with golden highlights. Its aromas sketch a mineral, smoky bouquet, with white fruit and flint to the fore and subtle hints of white pepper. On the palate it is supple and fresh, with a long finish.
What it pairs with
Excellent with fish starters and fish soups, it pairs well with steamed crustaceans and braised white meats. Also great with sushi.
When to serve it
Its fresh, mineral profile makes it suitable to accompany the entire meal, especially the aforementioned fish courses.
