Bianco di Sei by Palmento Costanzo is an Etna white made from Carricante and Catarratto, produced on Mount Etna. Vinification in stainless steel and aging on fine lees confer a fresh and structured style. The use of native yeasts and fermentation at controlled temperature enhance its minerality and approachability, making it ideal for those seeking a white with character and authenticity. The vines are ungrafted and range from 30 to 100 years old.
Where it comes from
The grapes for Bianco di Sei grow on the slopes of Etna, in an area with volcanic soils. This terroir ensures optimal drainage and imparts a marked mineral character to the wine. The climate, with high diurnal temperature variation and constant winds, preserves the wine’s natural acidity and encourages balanced ripening.
How it's made
Hand harvesting between late September and early October selects only the best bunches. The grapes undergo gentle pressing and the must ferments in stainless steel with indigenous yeasts. Aging lasts 10 months on fine lees, then 8 months in bottle. This process preserves the wine’s freshness and enriches its aromatic profile, producing a wine that is both complex and immediate.
Tasting notes
To the eye, Bianco di Sei displays a brilliant straw yellow with greenish highlights. The nose reveals aromas of white-fleshed fruit, almond blossom, and herbal notes of sage and mint. On the palate, it is enveloping, with well-balanced savory notes, vibrant freshness, and a medium body. The long, mineral finish is a clear reminder of its volcanic origins.
Food pairings
This Etna white pairs well with smoked fish, shellfish, and seafood appetizers, enhancing flavorful dishes without overpowering them. Excellent with traditional zuppa alla marinara, it also complements lemon tagliolini with prawns. When to serve
Bianco di Sei best expresses its freshness and acidity in its early years, but can evolve positively for up to 5–6 years if well stored.
