Sul Vulcano by Donnafugata is a vibrant Sicilian white wine made from Carricante grapes, grown on the northern slopes of Mount Etna. This Etna Bianco combines a deep mineral profile with pleasing acidic tension, offering a sip with a captivating texture. Its style is distinctive for its freshness and elegance, marked by intriguing aromatic complexity and remarkable persistence on the palate.
Where does it come from
The vineyards are located on the northern slopes of Mount Etna, at an altitude between 600 and 750 meters. The volcanic sandy soils give this wine a clear and unmistakable territorial character. The continental climate, tempered by Mediterranean influences, brings about sharp temperature variations between day and night. This unique combination of altitude and terrain gives the wine its characteristic freshness and precision.
How is it produced
The process begins with manual harvesting and careful selection of the grape bunches. This is followed by gentle pressing and fermentation in stainless steel at a controlled temperature, designed to preserve the fruit. Ageing takes place mainly in tanks for ten months, with a small portion in second- and third-use barriques to enrich the structure without overpowering the character of the grape variety. The cycle finishes with about sixteen months of bottle maturation.
Tasting notes
In the glass, it displays a straw yellow color with bright golden highlights. The nose offers a complex bouquet, dominated by distinct mineral nuances and citrus notes of citron and grapefruit, wrapped in white flowers, ginger, and vanilla. On the palate, it is lively and enveloping, characterized by vibrant freshness. The clear saline vein leads the tasting towards a long finish, perfectly echoing its volcanic origins.
