What kind of wine is it?
Etna Bianco Sant’Esther by Aaron Montis is a white wine made exclusively from Carricante grapes grown on the eastern slope of Mount Etna, Sicily. Its profile unveils a tense and vertical character, underpinned by a distinct minerality connected to the volcanic soils and a well-defined structure.
Where does it come from?
The grapes come from alberello-trained vineyards located in Sant’Alfio, on the eastern side of Mount Etna. Here, the lava-based soils are rich in volcanic minerals, a quality found in the glass through saline sensations and a dry, coherent flavor profile true to its origin.
How is it made?
After harvest, the grapes undergo gentle pressing to preserve their aromatic integrity. Fermentation is followed by aging on the lees for at least six months in barriques and tonneaux made of French oak and acacia, using new wood and wood of the second and third passage. The process continues in steel tanks and then in the bottle for at least eighteen months, to harmonize both structure and aromatic profile.
Tasting notes
In the glass, the wine displays a vertical and measured character, with evident but well-integrated minerality. Mineral notes of sulphur and phosphorus are perceptible with precision and no excess. The palate is enveloping and balanced, with a subtle tannic sweetness offering definition to the structure.
Food pairings
It pairs naturally with smoked fish, where the tension of the palate and the mineral quality help balance the savory component and more intense flavors. It is also recommended with first courses made with seasonal vegetables, where its structure supports delicate preparations without overpowering their aromas.
When to serve
Ideal when looking for a white with personality for a seafood table or a vegetable-based menu. When served chilled, it highlights the mineral component and the precise profile; if just opened, it may benefit from a brief aeration in the glass to open up its aromas.
