What kind of wine it is

Fixin by Labouré-Roi is a still red wine from Burgundy made exclusively from Pinot Noir. Crafted in a structured and balanced style, it is designed to express finesse and intensity without losing precision, with an ageing potential that allows it to evolve further in the bottle.

Where it comes from

It comes from Fixin, the northernmost village of the Côte de Nuits, near Marsannay. The vineyards are located on gentle slopes facing east and southeast, at altitudes between 270 and 360 meters, on limestone soils with traces of marl, an environment that encourages Pinot Noir of good tension and solidity.

How it is produced

The Pinot Noir grapes are hand-picked and vinified using a traditional approach that highlights the characteristics of the terroir. Fermentation takes place in temperature-controlled vats with prolonged maceration; the wine then matures in wood for an appropriate period, thus developing depth and complexity without departing from the typical profile of the region.

Tasting notes

In the glass, it shows an intense red color. On the nose, there are notes of black cherries and refined spices. On the palate, it is balanced, with structure and an aromatic persistence that combines power and finesse, leaving a consistent and stable finish.

Food pairings

At the table, it naturally accompanies braised pork and parsley entrecôte, supporting their succulence and aromatic components. It also pairs well with poultry stews, including spicy ones, as well as dishes like paella, tapas, and spring rolls. Among cheeses, it finds a convincing match with Chaource, Comté, and Époisses.

When to serve

It is recommended when you seek a Burgundy red with good structure and aromatic definition, especially with meat dishes and cheeses.
