Franciacorta Satèn from Ca’ del Diavolo is a white wine made from Chardonnay grapes using the Traditional Method. It is recognizable by its soft mousse and very fine perlage, which provide a creamy and harmonious sensation in the glass. The second fermentation in the bottle and aging on the lees for at least 24 months enrich the profile with more complex notes while keeping the style fresh and balanced. Where it comes from
This Satèn originates in Franciacorta, from grapes harvested in fifteen vineyards spread across seven towns. The local conditions favor temperature variations that help balance sugars and acidity, while the diversity of soils is reflected in the wine’s mineral freshness.
How it is produced
The grapes are harvested in mid-August with manual selection and transported in small crates. The Chardonnay grapes undergo gentle pressing and fermentation in stainless steel at controlled temperature. A reduced amount of sugar is used in the liqueur de tirage, typical of Satèn, resulting in a finer perlage. The wine undergoes a second fermentation in the bottle following the Traditional Method and ages on the lees for at least 24 months, developing creaminess and aromatic complexity.
Tasting notes
In the glass, Franciacorta Satèn from Ca’ del Diavolo displays a delicate straw yellow with a fine and persistent perlage. On the nose, floral notes of white flowers emerge, along with small white-fleshed fruits and hints of bread crust and toasted almond. On the palate, the mousse is enveloping, the body remains soft and creamy, the vibrant freshness supports the sip, and the finish is harmonious with citrus nuances and biscuit accents.
Food pairings
The versatility of this Satèn adapts well to seafood appetizers such as tuna tartare and steamed shellfish, and to light first courses such as seafood risotto and pasta with clams. It also pairs well with traditional Lombard dishes like Milanese cutlet and cassoeula brianzola. Excellent with fried calamari and shrimp, it also finds a good balance with fish soup, enhancing the fresh and mineral character of the sip.

Franciacorta Satèn from Ca’ del Diavolo expresses its best freshness and creaminess in the first years after disgorgement and can evolve positively for up to five years with citrus and toasted notes.
