Description

The Franciacorta Brut Cuvée n. 7 is a sparkling wine produced by Lo Sparviere winery exclusively with Chardonnay grapes grown in Provaglio d'Iseo on marl soils with a predominance of silt. The vineyards are south-west facing and situated at about 180 meters above sea level, in a renowned area of Franciacorta that ensures a fine and territorial expression.

The winemaking process includes pre-chilling of the grapes followed by soft pressing of the whole bunches, using only 60% of the free-run juice. Fermentation takes place at 16°C to keep the aromatic component intact. The base wine ages on the lees for about 7 months in steel, followed by the secondary fermentation and a long bottle aging for 30 months.

The wine presents itself as straw yellow with golden highlights and a dense, persistent perlage. On the nose, notes of acacia honey, yellow peach, dried fruit, and bread crust are perceived. On the palate, it is fresh, savory and mineral, well-balanced with a soft and persistent structure.

Excellent as an aperitif with vegetable puff pastries or marinated salmon canapés.
