Description

This Franciacorta Brut Millesimato from Lo Sparviere is produced with Chardonnay grapes from vineyards facing southwest in the municipality of Provaglio d'Iseo, on soils with silt and red clay. The altitude of 180 meters promotes balanced grape ripening.

The grapes are chilled before gentle pressing, from which 55% of the free-run juice is extracted. Fermentation occurs at 15–17°C, with part of the wine undergoing malolactic fermentation. The base wine matures for 6 months on the lees in stainless steel before tirage, with final aging of 48 months in the bottle.

Straw yellow with golden highlights and a fine perlage. On the nose, it expresses notes of biscuit, acacia honey, candied fruit, and beeswax. The palate is fresh, slightly citrusy, and persistent.

Excellent with creamy risottos, baked pasta dishes, or raw seafood.
