Description
The Cuvée 1564 Brut Nature by Castello Bonomi is a sparkling wine made using the traditional method with equal parts Chardonnay and Pinot Noir grapes, completed by a small percentage of Erbamat, an ancient local grape variety from Franciacorta. The grapes come from terraced vineyards facing west, located in the highest part of the estate. The agronomic approach is focused on quality, with manual harvesting and careful vineyard management to preserve the integrity of the grapes.
After harvesting, the grapes undergo gentle pressing and are vinified separately based on the parcel of origin. Fermentation takes place in stainless steel tanks at a controlled temperature to maintain the freshness of the fruit. Part of the Chardonnay free-run juice and a small fraction of Erbamat ferment and age in barrels for several months, while the Pinot Noir is vinified as a white wine and aged in steel.
In appearance, it shows a fine and persistent perlage. On the nose, it offers elegant floral sensations accompanied by citrus and mineral notes. On the palate, it stands out for its lively acidity and perfect balance, with a fine structure and a dry, precise finish that contribute to a taste profile of great elegance and typicality.
It is ideal when paired with sushi, oysters, shellfish, fresh mozzarella, prosciutto, baked fish dishes, and vegetable casseroles, but it also makes for a surprising match with veal fillet.
