Description

The Demetra Rosé by Mirabella is a Brut Nature Franciacorta of great character, made from a refined blend of Pinot Noir, Chardonnay, and Pinot Blanc. The grapes come exclusively from the Mirabella vineyard, located in Paderno Franciacorta, on a fluvio-glacial soil that imparts elegance and complexity to the wine.

The vinification involves the separate pressing of the grapes with limited yields, using only the free-run juice and a skin contact maceration of the Pinot Noir to extract the color. The fermentation occurs at controlled temperatures in concrete tanks, followed by a long aging of at least 70 months on the lees, with no added sugars in the dosage.

It presents an elegant blush pink with golden reflections. The aromatic profile is rich and enveloping, with notes of toast, pink grapefruit, and brioche, enriched by hints of eucalyptus and almond. On the palate, it is distinguished by freshness and sapidity, with flavors of blood orange, white flowers, and savory pastry, culminating in a powerful and persistent finish.

It pairs perfectly with dishes based on shellfish, white meats, and charcuterie boards.
