Description

The Franciacorta Brut of the Pavò winery is a kind of calling card, a way of presenting the winery's style. We are in Iseo, in the province of Brescia, in one of the Italy's most renowned areas for the production of Metodo Classico.

It is composed of 90% Chardonnay and 10% Pinot Noir. The alcoholic fermentation of the must takes place partly in steel and partly in barrique. The malolactic fermentation begins spontaneously before ageing in steel for 5 months and in wood for another 6 months. It is bottled with its own yeasts and rests in their presence for at least 30 months.

Its colour is straw yellow, with a fine and persistent perlage. On the nose, it has hints of gooseberry and citrus fruit, over a background of sweeter fruit and pastry. The palate is fine, fresh and savoury, with a long persistence of the yeast.

Perfect with a summer aperitif.
