Description

The Franciacorta Grandi Cru Millesimato of the Cavalleri company is made with 100% Chardonnay grapes.

After harvesting, the Chardonnay grapes ferment and refine 85% in steel while the remainder is divided between barriques and large barrels. After refermentation in the bottle, the wine ages a further 52 months in contact with the yeasts before disgorgement.

Bright golden yellow in color, it has a fine and persistent perlage that unfolds notes of candied cedar, green apple, yeast and a touch of sweet spices on the nose. On the palate it is soft and enveloping, with a well-balanced freshness and with a return of floral scents that are a prelude to a long persistence.

Suitable to accompany sushi and cheese-based aperitifs, it is perfect for fish soups and shellfish-based dishes such as seafood risotto.
