Alma Assemblage 2 represents one of the most emblematic expressions of Bellavista's production philosophy, which enhances the territory through a careful selection of 75 vineyards primarily located in the company's historic crus. Made from a blend of Chardonnay, Pinot Nero, and a very small percentage of Pinot Bianco, it fully reflects the elegance and complexity typical of Bellavista's style, also thanks to the average vine maturity, of about thirty years, and refined agricultural management.
Vinification involves a gentle pressing that allows the separation of the must from the successive cuts, while part of the mass is aged in small oak barrels to add structure and depth. The blending process also includes a large portion of reserve wines from multiple vintages, thus contributing to the stylistic consistency and taste identity of the product. The tirage is followed by an average aging on the lees of about 30 months, and a manual riddling phase before disgorgement.
In the glass, it appears a bright yellow with a fine and persistent perlage, enriched by a creamy and pinpoint bubble. The aromatic bouquet opens with Mediterranean floral hints, fresh citrus, balsamic nuances, and sweet spices, outlining a refined and dynamic olfactory profile. On the palate, it is structured yet gentle, with a sapid-mineral vein that provides balance and depth; notes of pomelo, white plum, wildflower honey, and candied citrus emerge, which blend into a long and harmonious taste persistence.
Perfect with raw fish dishes, tuna tartare, or delicate crustacean-based risottos.
