What kind of wine is it
Sylvó by Lo Sparviere is a Franciacorta Extra Brut made from Chardonnay grapes, offering a dry and precise style. The cuvée begins with a base that ferments partly in steel and partly in wood, undergoing partial malolactic fermentation, followed by the Traditional Method with a long period on the lees to develop structure and persistent flavor.
Where does it come from
The Chardonnay comes from the towns of Monticelli Brusati and Provaglio d’Iseo, in the Franciacorta area, with vineyards pruned using the Sylvoz method. The parcels are located at an altitude of 180 meters facing northwest and rest on flinty and calcareous marl soils, elements that are reflected in the wine’s precise texture and marked mineral sensation.
How it is produced
After harvest, the grapes are chilled and gently pressed to obtain 50% free-run must. Fermentation takes place 70% in steel and 30% in wood, with partial malolactic fermentation. The cuvée also includes wines from previous vintages, and the bottle aging on the lees lasts for 60 months, a pivotal step in developing the perlage and overall balance.
Tasting notes
In the glass, it presents a bright straw yellow with golden highlights and a fine, continuous mousse. On the nose, ripe pineapple and white peach appear, followed by dried fruit and mountain honey. On the palate, it is full and vibrant, with a pronounced minerality accompanying the development and a dry finish in line with the Extra Brut style.
Food pairings
At the table it pairs well with flavorful dishes such as cotechino and roast pork loin, where its dry touch and good tension help balance texture and succulence. It also goes well with sushi, thanks to its precise aromas and mineral progression.
When to serve it
It is suitable both as an aperitif and throughout a meal, whenever a dry and defined style is desired. Served well chilled, it enhances the persistence of the mousse and aromatic clarity, highlighting the mineral streak and the structure shaped by time on the lees.
