Description

Franciacorta Nature di Pavò comes from grapes that come from the hilly vineyards of Iseo, planted on soil of morainic origin.
70% Chardonnay, complemented by 30% Pinot Noir, this nature is the result of a soft pressing of the grapes. The heart of the must ferments in stainless steel at a controlled temperature of 15 ° C and for a small percentage in barrique. The sparkling base is aged for 6-7 months between steel and oak, then sparkling in the bottle, according to the Classic Method, with aging for 30 months on its own yeasts.
The color is straw yellow, while the perlage is minute and persistent. The nose offers a balanced synthesis of rich and floral notes, accompanied by hints of yeast. The palate is delicately wrapped to give space in the center and right in the mouth to a fresh and savory sip.
Pleasantly accompanies risotto with perch and shellfish.
