Description
Franciacorta Novalia is born in the beautiful vineyards of Villa Crespia, located in the prestigious and fascinating area of Franciacorta.
This bubble is made exclusively with Chardonnay grapes, harvested and selected by hand. After fermentation and ageing in steel for 5 months, the wine follows the traditional process of the Metodo Classico, carrying out second fermentation and ageing in bottle for at least 24 months. The disgorgement is carried out at least 30 months after the harvest.
Novalia has a straw yellow colour, with an elegant and persistent perlage. The nose offers an initial scent of unripe fruit, well supported by refined notes of rose and lime, which create a perfect combination with fragrant sensations of yeast and small vegetal notes. In the mouth a remarkable acid vein stands out, supported by a good body and a smooth and bewitching effervescence.
Excellent with vegetable-based dishes, it is enhanced with raw fish.
