Description

What kind of wine is it

Franciacorta Pas Dosé 180 by Clarabella is made from a blend of organic grapes of Chardonnay and Pinot Noir, an authentic expression of the territory. Its production follows the strict Traditional Method, which ensures a significant structure and complexity resulting from prolonged aging. This wine stands out for its dry and very precise style, enhanced by a period in barriques for part of the Chardonnay, which provides a broad and well-defined profile.

Where it comes from

The vines grow in the picturesque setting of the province of Brescia, in the heart of the Franciacorta region. The identity of this territory is reflected in a distinctive aromatic signature, capable of harmoniously combining ripe fruit with undertones of aromatic herbs. The name chosen by the producer is a tribute to Law 180 of 1978, a historic reform that transformed the approach to psychiatry in Italy.

How it's made

The creation of this label begins with meticulous vinification in which a portion of the Chardonnay rests in small barrels to develop roundness and character. The subsequent prise de mousse is achieved through the Traditional Method, with a slow and careful refermentation in the bottle. The wine then ages on the lees for at least 60 months, a crucial technical choice that offers consistency, deep flavor persistence, and maintains a dry profile without any sugar dosage.

Tasting notes

In the glass it shows an intense golden yellow color, highlighted by a fine and persistent perlage. The bouquet offers inviting aromas of ripe fruit, enhanced by subtle hints of spices and aromatic herbs that define a clean and precise nose. On the palate, it is crisp and dry, with a consistent flavor progression culminating in pronounced vanilla notes and light flinty touches on the finish.

Food pairings

The structure and intensity of this sparkling wine make it the ideal partner to enhance flavorful and structured dishes. At the table, it pairs harmoniously with traditional recipes, as it balances preparations that call for a dry and well-sustained sparkle. Its crisp flavor profile supports complex courses perfectly, creating a pleasant synergy between the richness of the food and the clean finish.

When to serve

This Franciacorta is the right choice for occasions that demand a dry and rigorous profile, perfect for accompanying convivial moments during an important meal. Its long aging makes it suitable for dinners where you want to enjoy a bottle with a well-defined aromatic depth. It is ideal to uncork when you wish to appreciate a precise finish, enhanced by a pleasant taste persistence.
