Description
The Franciacorta Rosé Monique from the Lo Sparviere winery is a sparkling wine made exclusively from Pinot Noir grown at an altitude of 250 meters in Provaglio d'Iseo, on marl soils with silt and red clay. The southeast exposure promotes perfect phenolic ripeness of the grapes.
After an initial cooling, the grapes undergo maceration for 8 to 12 hours to extract color and aromas. Fermentation takes place in steel and small wood barrels where malolactic fermentation also occurs. The wine matures for 24 months in the bottle on the lees.
Visually, it is salmon pink with copper highlights. The bouquet is dominated by notes of rose water and red fruits, while on the palate it is elegant and savory, with balanced acidity and a long finish.
Ideal with cured meats, meat or mushroom-based pasta dishes, and red meat main courses.
