Description
What kind of wine it is
Ferghettina’s Franciacorta Pas Dosé Riserva 33 is made using the Traditional Method, crafted solely from Chardonnay grapes. Its Riserva identity shows in a long ageing, conceived for a wine of real character.
Where it comes from
The wine originates on the gentle hills of Franciacorta, on calcareous-clay soils at an altitude of 250 meters above sea level. This hillside terroir contributes to the wine’s precision and minerality.
How it is made
The Chardonnay grapes are hand-harvested in mid-August and vinified separately, vineyard by vineyard. After a gentle pressing of the bunches, only the free-run must ferments in stainless-steel tanks at controlled temperatures, between sixteen and eighteen degrees. The wine is then blended into a cuvée and undergoes a secondary fermentation in bottle according to the Traditional Method, followed by a long ageing on the lees of 80 months.
Tasting notes
The color is golden yellow, with a fine, persistent perlage. On the nose it opens with hints of candied orange, over an elegant backdrop of ripe fruit. On the palate the mousse is deep and characterful, with a remarkably long finish.
Food pairings
Ideal with grilled fish and cured meats, and also well suited as an aperitif.
When to serve it
Serve well chilled, at around 6-8°C, as an aperitif or to start a meal. Thanks to the long ageing, it’s an excellent choice for the most important occasions.
