What kind of wine is it

Franciacorta Rosé Brut by Ca’ del Diavolo is produced using the Traditional Method in Lombardy. Made exclusively from Pinot Nero grapes, this wine expresses a fresh and intriguing profile, marked by precise structure. The meticulous production process, involving extended ageing on the lees, imparts remarkable aromatic finesse. Designed to deliver satisfying drinking pleasure, it expresses the unique characteristics of Franciacorta and stands out for its clear fruit expression.

Where does it come from

This wine is crafted on the hills of Franciacorta, a region historically dedicated to viticulture. The visual identity of the bottle draws inspiration from an ancient medieval grimoire, known as the Lesser Key of Solomon or Lemegeton. The label depicts one of its seventy-two magical seals, dedicated to the spirit Zepar, an entity associated with emotions and feelings. This esoteric narrative blends with its geographic origin, making the product highly recognizable within the Ca’ del Diavolo brand.

How it is made

Harvesting is carried out by hand around mid-August, with strict bunch selection to ensure the integrity of the fruit. After gentle pressing to extract the free-run must, fermentation takes place at low temperatures in stainless steel containers to preserve the varietal aromas. The wine rests for six months before undergoing secondary fermentation in bottle according to the Traditional Method. This is followed by a maturation of at least twenty-four months on the lees before disgorgement and an additional period of bottle ageing.

Tasting notes

In the glass it displays a bright rosé color, crossed by a fine, persistent perlage. The aromatic profile opens with delicate floral notes of rose, followed by fruity nuances of strawberry and raspberry. As it evolves in the glass, autolysis-derived aromas emerge, such as yeast, bread crust, subtle hints of brioche, and toasted almond. On the palate it is fresh and enveloping, supported by an excellent balance between lively acidity and fruit richness, finishing soft and persistent.

Food pairings

Its neatly structured profile makes it suitable for accompanying fresh cheeses and enticing crostini, ideal as a meal starter. Its gustatory freshness and fragrant yeast notes create a pleasant continuity with the delicacy of the ingredients. This sparkling wine also pairs well with dry pastries and confectionery, as the acidity supports the sweetness and balances the palate.
