Description
This Sauvignon by Tenimenti Civa originates from the vineyards of Bellazoia di Povoletto, in the province of Udine, whose Friulian name Biele Zôe identifies the production line to which it belongs.
It is obtained almost exclusively from Sauvignon Blanc grapes and from small additions of Chardonnay and Friulano, harvested manually around the middle of September in the coolest hours of the day. The whole pressed grapes are left to ferment in steel for 15 days, after which the wine is left to age for 4-6 months on the fine lees.
It is characterized by a straw yellow color with greenish hues. The nose advances on varietal aromas of elderberry, accompanied by notes of pink grapefruit, white peach and tomato leaf, closing on tones of aromatic herbs and an elegant mineral background. In the mouth it is pleasantly fresh and gritty, with great balance.
Ideal in combination with an asparagus risotto or a first summer dish, it goes well with fresh goat cheeses.
