Description
This Pignolo was born in the Eldoro vineyard, from which it takes its name, which is located in Dolegnano, in the Udine area of San Giovanni al Natisone.
It is produced exclusively from Pignolo grapes, an autochthonous Friulian grape, harvested entirely by hand between the end of September and the first days of October. Fermentation takes place for 15 days, in contact with its skins, at a controlled temperature of 24 ° C. 15 months of aging in wood follows, which continues for a long period in the bottle.
It appears at the sight of a bright ruby red color. The scent is pleasantly vinous, with evident references to blackberry and black cherry, to which elegant spicy notes follow. In the mouth it is fresh and harmonious, with soft tannins.
Perfect in combination with first courses and roasts, it is ideal in the company of all game dishes.
