The Hautes-Côtes de Nuits by La Maison Romane is a still white Burgundy made exclusively from Chardonnay. It comes from the hills above the Côte de Nuits and offers a fresh, linear style, with balanced structure and pronounced minerality. The winemaking process includes controlled temperature fermentation and measured barrel aging, adding complexity without masking the varietal purity. Where does it come from?
The wine comes from Villars-Fontaine, in the heart of the Hautes-Côtes de Nuits, within the Côte d'Or in Burgundy. The vineyards are located on hills higher than the classic slopes of the Côte de Nuits and benefit from a cool and breezy climate. These conditions favor a slow ripening of the grapes, preserving natural acidity and offering taut aromatic profiles. Clay-limestone, well-drained soils contribute to savoriness and a mineral finish.
How is it produced?
The Chardonnay grapes are harvested at full ripeness and gently pressed to obtain clean musts. After static clarification, alcoholic fermentation takes place at controlled temperature to preserve freshness and aromatic precision. Aging in barrels, managed carefully, gives volume and micro-oxygenation without intrusive toasted notes, resulting in a balanced and clean profile.
Tasting notes
It appears a bright straw yellow in the glass. The nose reveals white flowers, yellow-fleshed fruit, and citrus, with hints of vanilla and sweet spices from barrel aging. The palate is fresh and savory, with well-integrated acidity, medium body, and a tension that carries the progression. The finish is persistent and mineral, clearly reflecting the clay-limestone soils of origin.
Food pairings
Pairs well with grilled fish, shellfish, and delicately prepared white meats, where freshness and savoriness enhance the iodized component and gentle cooking. In French cuisine, it complements seared scallops and trout meunière, thanks to the interplay between richness and acidity. Also excellent with poulet à la crème, where the wine’s structure supports the sauce without losing definition. Ideal with soft, not overly aged cheeses, served at the right temperature.
When to serve
Perfect as a table white for lunches and dinners where precision and palate clarity are desired, especially with seafood or white meat dishes.
