Description
What kind of wine is it
Aglianico Mattoda’ by Fonzone is a red wine Irpinia Campi Taurasini made from Aglianico grapes from Irpinia. The cuvée is born from merging one part vinified in a cocciopesto amphora and another part processed in stainless steel, with aging in different containers that refine its profile. The result offers a balanced and balsamic style, with fine tannins and a well-defined persistence.
Where it comes from
It originates in Irpinia, in Paternopoli in the province of Avellino, from vineyards laid out on two sides of a well-ventilated hill. The plots are situated between 360 and 430 m above sea level and are bordered by the Fredane and Ifalco streams, a setting that affects the site’s exposure and ventilation and contributes to a measured and clean aromatic expression.
How it is made
The Aglianico grapes are worked in two distinct vinifications. One part macerates and ferments in a cocciopesto amphora for 30 days and, after racking, ages for a further 18 months. Another part macerates and ferments in stainless steel tanks for about a month and, after racking, continues aging for 18 months in large casks, barrels, and second- and third-pass barriques. The final blend highlights the unique imprint of the various fermentation and maturation vessels.
Tasting notes
To the eye, it shows a ruby red color. On the nose, aromas of blueberries emerge, accompanied by minty notes recalling eucalyptus and vanilla, in a clear and recognizable bouquet. On the palate, the sip is balanced and balsamic, supported by fine tannins and a pleasant length, with a regular progression and a clean finish.
Food pairings
At the table, it pairs well with roast meats, spicy dishes, and truffle-based preparations, as well as aged cheeses. The fine tannic structure and balsamic profile make it suitable for structured dishes, where the cooking and savoriness require a red wine that is balanced and persistent on the palate.
When to serve
Ideal when you want a technically crafted red wine that offers taste balance, fine tannins, and a clearly perceptible persistence. Suitable for lunches and dinners featuring roasts, spicy dishes, truffle preparations, or aged cheeses, as the balsamic character and consistent palate support the pairing.
