Description

Santo Stefano is a Campi Taurasini red wine from Tenuta Cavalier Pepe made from Aglianico grapes grown in the estate's hillside vineyards located in the municipalities of Luogosano, Sant’Angelo all’Esca, and Taurasi, at about 350 meters above sea level. The clay-limestone soils with volcanic components help define a rich and structured profile.

The grapes are harvested at full ripeness, hand-selected, and destemmed; fermentation takes place in temperature-controlled steel tanks with maceration on the skins for about two weeks, followed by aging in French oak barriques, in concrete tanks, and finally in the bottle to complete the evolution.

It has an intense ruby red color; on the nose, notes of wild berries and black cherry emerge, accompanied by spicy and licorice hints; on the palate, it is full and harmonious, with mature, elegant tannins that provide balance and persistence.

It pairs perfectly with meat dishes, hearty pasta with rich sauces, baked preparations, and aged cheeses.
