Description
What type of wine is it
Sequoia Fonzone is an Irpinia Fiano made from 100% Fiano grapes sourced from vineyards in Paternopoli, in the Irpinia territory. This is a white wine vinified with a temperature-controlled fermentation that takes place in both stainless steel and wood, offering a precise and clean technical profile. It reveals a balanced and defined style, with freshness and a more mature taste component that supports persistence. The prolonged aging in fermentation containers and later in bottle completes an orderly expression, with good continuity between the nose and palate.
Where it comes from
Irpinia Sequoia comes from vineyards located in the municipality of Paternopoli, in the heart of the Irpinia landscape, where Fonzone selects the grapes intended for this Irpinia Fiano. The origin is directly linked to a single municipal area in Irpinia, clearly marked as the source of the grapes. The choice to work in this area enables clear territorial coherence, with a focus on aromatic precision and a balanced tasting texture. The geographical indication and designation return the wine to a defined and recognizable context.
How it is made
The Fiano grapes are carefully hand-picked and selected, ensuring only the best fruit reaches the winery. Fermentation takes place at a controlled low temperature and occurs in both stainless steel and wood, a choice that combines control with slight micro-oxygenation during the early phases of winemaking. After fermentation, the wine is aged for 7 months in the same fermentation containers. This is followed by a further 9 months of bottle aging before release, allowing aromas and flavors to harmonize.
Tasting notes
To the eye, it presents an intense and bright straw yellow color, with a luminosity that anticipates a clean profile. On the nose, hints of dried fruit, chamomile and freshly cut grass emerge, accompanied by delicate mineral notes that define the whole. On the palate, it is balanced between sweetness and acidity, with a steady and well-supported progression. The finish is pleasantly toasted and persistent, consistent with both the steel and wood vinification and the aging regimen prior to release.
Food pairings
Sequoia pairs naturally with risottos and fish-based dishes, enhancing recipes that require balance and aromatic continuity. It is especially suitable for pairing with shellfish, where its freshness highlights succulence, and with fresh cheeses, which find a counterpoint in the toasted finish. At the table, it goes well with a seafood risotto, echoing the recommended pairings for this wine, ensuring a consistent and enjoyable drinking experience.
When to serve it
This is a white to choose when you want an orderly and complete expression of Fiano, able to accompany a meal without being overwhelming. Thanks to 7 months of aging in fermentation containers and a further 9 months in bottle before release, it is already harmonized and ready to be enjoyed when put on sale. It is perfect for well-prepared everyday occasions, but also fish and risotto lunches where freshness and balance are paramount. Its persistence and toasted finish make it suitable for more intense dishes as well, while always maintaining an enjoyable drinkability.
