Sequoia Fonzone is an Irpinia Fiano made exclusively from Fiano grapes grown in vineyards in Paternopoli, in the Irpinia area. It is a white wine vinified with controlled low-temperature fermentation that takes place both in stainless steel and wood, offering a precise, clean technical profile. It shows a balanced and defined style, with freshness and a riper taste component supporting its persistence. The extended aging in the fermentation vessels and then in bottle completes an orderly expression, with good continuity between nose and palate.
Where it comes from
Irpinia Sequoia comes from vineyards located in the municipality of Paternopoli, in the heart of the Irpinia landscape, where Fonzone selects the grapes destined for this Irpinia Fiano. Its origin is directly linked to a single municipal area in Irpinia, indicated as the source of the grapes. The choice of working in this area allows for clear territorial consistency, with a focus on aromatic precision and a balanced taste structure. The geographical indication and the denomination root the wine in a defined and recognizable context.
How it is produced
The Fiano grapes are carefully hand-picked and selected to bring intact raw material to the winery. Fermentation takes place at a controlled low temperature, both in stainless steel and wood, a choice that combines control and slight micro-oxygenation in the early stages of vinification. After fermentation, the wine ages for 7 months in the same fermentation vessels. It then undergoes a further 9 months of bottle aging before release, in order to harmonize aromas and flavors.
Tasting notes
In the glass, it displays an intense, bright straw-yellow color, with luminosity that hints at a clean profile. The nose reveals scents of dried fruit, chamomile, and cut grass, accompanied by delicate mineral notes that define the whole. On the palate, it is balanced between sweetness and acidity, with a regular, well-supported progression. The finish is pleasantly toasty and persistent, consistent with vinification in steel and wood and the planned aging before sale.

Sequoia naturally pairs with risottos and fish-based dishes, enhancing preparations where balance and aromatic continuity are needed.
