This is a white wine vinified with a temperature-controlled fermentation that takes place in both stainless steel and wood, offering a precise and clean technical profile. It reveals a balanced and defined style, with freshness and a more mature taste component that supports persistence. The prolonged aging in fermentation containers and later in bottle completes an orderly expression, with good continuity between the nose and palate.

Where it comes from

Irpinia Sequoia comes from vineyards located in the municipality of Paternopoli, in the heart of the Irpinia landscape, where Fonzone selects the grapes intended for this Irpinia Fiano. The origin is directly linked to a single municipal area in Irpinia, clearly marked as the source of the grapes. The choice to work in this area enables clear territorial coherence, with a focus on aromatic precision and a balanced tasting texture. The geographical indication and designation return the wine to a defined and recognizable context.

How it is made

The Fiano grapes are carefully hand-picked and selected, ensuring only the best fruit reaches the winery. Fermentation takes place at a controlled low temperature and occurs in both stainless steel and wood, a choice that combines control with slight micro-oxygenation during the early phases of winemaking. After fermentation, the wine is aged for 7 months in the same fermentation containers. This is followed by a further 9 months of bottle aging before release, allowing aromas and flavors to harmonize.
