Description
Cimal Tempranillo is produced by Familia Bastida, from vineyards aged between 20 and 30 years, located on sandy and clay soils that help retain moisture during dry summers. This wine expresses the identity of the Tempranillo variety in a balanced and accessible version, designed to highlight the harmony between fruit and wood.
The winemaking involves manual grape harvesting and fermentation with indigenous yeasts. Subsequently, the wine is aged for 6 months in French and American oak barrels, then rests for another 2 months in the bottle before being released to the market. This process allows the wine to mature gradually, gaining complexity and structure without losing freshness.
In appearance, it shows a medium-intensity cherry red color. On the nose, clear aromas of ripe red fruits emerge, enriched by toasted and spicy notes resulting from the aging in wood. On the palate, it stands out for its softness and roundness, with a velvety texture and a long, pleasant finish that invites continued sipping.
It pairs excellently with grilled red meats, light roasts, and aged cheeses.
