Description
Lambrusco di Sorbara Amabile Contessa Matilde di Cavicchioli comes from vineyards bred with double curtains, in the area between the Secchia and Panaro rivers, north of Modena.
The grapes from which it is obtained, Lambrusco Sorbara and Lambrusco Salamino, are harvested at the end of September, cold macerated and left to ferment for 4-5 days at a controlled temperature of 15-18 ° C. Followed by second fermentation in autoclave, according to the Long Charmat Method, at a temperature of 13-15 ° C.
Cavicchioli's Lambrusco Amabile Contessa Matilde is characterized by a not very intense ruby red color covered with violet reflections, a light pink foam and a fine perlage. The nose has a large and marked bouquet, with evident hints of violet. In the mouth it is full and soft, pleasantly fruity.
Excellent in the company of the typical cold cuts of the Emilian tradition, it goes well with Mediterranean dishes and fried vegetables or fish.
