What kind of wine is it
Via del Sale di Fontanafredda is a still white wine from the Langhe denomination, made from a blend of native and international white grapes grown on the Piedmontese hills. Fermentation in stainless steel at controlled temperature and ageing on the fine lees bring a dry and structured style with a fruity profile and above-average persistence. This technical approach ensures balance and definition, and the wine is suitable both for young consumption and for short-term bottle ageing.
Where it comes from
The grapes come from vineyards situated between Bassa Langa and Alta Langa, in the heart of the Langhe region in Piedmont. The hillside altitude and varying exposure encourage gradual ripening, while the continental climate with marked temperature changes helps retain acidity and develop intense aromas. The soils, made up of calcareous marl, clay, and sand, give volume and structure on the palate, with a modern and precise profile.
How it is made
The harvest aims to preserve the freshness and integrity of the fruit, with rapid transfer to the cellar. Fermentation takes place in low-temperature stainless steel tanks (18–20 °C) to enhance the primary aromas. Ageing on the fine lees for about a year in steel increases the sense of body and stabilises the aromatic profile. The absence of wood keeps the wine clean and taut, while lees management gives roundness without losing freshness.
Tasting notes
In the glass, it shows an intense and bright straw yellow colour. On the nose it reveals notes of exotic fruit, acacia flowers, and honey, supported by a well-ordered bouquet. On the palate it is dry, with good structure and volume, well balanced between smoothness and freshness. The finish is persistent and clean, with fruity returns that accompany food harmoniously.
Food pairings
Ideal as a pre-dinner drink for those seeking a full-bodied white, Via del Sale pairs with light starters and first courses, including fish dishes such as pasta with shellfish or delicate risottos. It also goes well with not overly structured Piedmontese dishes, such as Russian salad or fresh cheeses. A recommended traditional pairing is vitello tonnato, where the wine's structure balances the dish's creaminess and savory notes.
When to serve it
Serve Via del Sale when you want a technically crafted and defined white, suitable both as a refined aperitif and with light or moderately structured meals. The ideal serving temperature is between 10 and 12 °C in a medium-sized glass, to highlight its fruity and floral notes. Thanks to its ageing on the fine lees, it can evolve positively for several years and maintains balance and intensity. If properly stored, it shows its best within a short to medium time frame.
