Description
The Nebbiolo Bric del Baio is a red wine made from a selection of grapes from the estate vineyards of Barbaresco and Treiso. It is a wine that embodies the production philosophy of Ca’ del Baio, combining complexity and balance, and expresses the purity of the Nebbiolo with elegance and character.
The grapes, after being destemmed and undergoing a short maceration, ferment in steel tanks at a controlled temperature. The malolactic fermentation takes place later in wood, where the wine matures for 12 months in large Slavonian oak barrels, following a natural cold stabilization.
With a garnet red color, it offers delicate scents of small red berries and raspberry jam on the nose. The taste is dry, warm, and harmonious, with a pleasantly tannic persistence that enhances its structure and drinkability.
Perfect with traditional Piedmontese cuisine, it accompanies raw meats, tagliolini with ragù, grilled meats, and medium-aged cheeses.
