Where it comes from

How it is made
Harvesting takes place between late August and early September to preserve freshness and ripeness. After destemming, cold maceration on the skins follows for 8-10 hours at 5-6°C, to extract aromas and a slight structure. Fermentation occurs in stainless steel at a controlled temperature between 13 and 15°C and ensures aromatic purity and precision. No malolactic fermentation is carried out, thus preserving acidity and tension. The wine is refined in the bottle and the flavor profile is stabilized.
Tasting notes
In the glass it appears straw yellow with greenish and golden highlights. The nose reveals mineral notes from the Grechetto alongside hints of almond and honey from Incrocio Manzoni, with a gradual progression as it breathes. On the palate it is harmonious, with integrated freshness and medium structure that supports the progression. The finish is long and savory, maintaining a technical and linear profile.

Drusilla Bianco easily pairs with seafood appetizers, shellfish, and dishes in which freshness and saltiness enhance the raw ingredients.
