Description

The Classic Method Brut Sparkling Wine Vulkano Cuvée 21 is produced by the Sandro de Bruno winery, made from a balanced blend of Chardonnay, Pinot Bianco, and Durella, grown at an altitude of 600 meters on the volcanic soils rich in basaltic rocks of Monte Calvarina, in the Roncà area. The high altitude and southern exposure provide freshness and aromatic intensity, while the soil's nature gives the wine a distinct mineral identity, which is reflected in the precise organoleptic profile.

After manual harvesting in the first decade of September, the grapes undergo a cold skin maceration for 12-18 hours in a closed press, followed by a gentle pressing in a protected atmosphere. Fermentation occurs in steel, and the wine matures on the fine lees for six months with weekly bâtonnage. The bottle fermentation is followed by an aging on the lees lasting 18 months before disgorgement and marketing.

The color is straw yellow with golden reflections, crossed by a fine and persistent perlage. On the nose, intense iodized mineral notes emerge, followed by citrus aromas of cedar, mandarin, and grapefruit, accompanied by floral scents of acacia and orange blossom, and a finish reminiscent of sweet spices and almond. On the palate, it reveals itself as fresh, savory, and creamy, with an elegant and slightly almondy finish that enhances its drinkability.

Perfect as an aperitif, it pairs well with finger food, charcuterie and cheese boards, raw fish, fried foods, and light first courses.
