Modena DOC Pignoletto Bianco della Contessa Cavicchioli
Description
The Pignoletto Bianco della Contessa was born in the vineyards of Cantine Cavicchioli, near the province of Modena.
This sparkling white wine is made entirely from Pignoletto grapes, harvested during the first ten days of September. After a cryomaceration lasting about 3 days, alcoholic fermentation follows on decanted must, with selected yeasts and controlled temperature. Finally, the process of refermentation in autoclave is followed, following the Charmat method for about 10 days.
The Pignoletto Bianco della Contessa is characterized by a very pale straw yellow color, with a fine and persistent perlage. The nose shows a moderate complexity, with jasmine floral notes that dominate the scene. In the mouth it is dry, soft and with excellent final persistence.
This wine finds its maximum expression in the moment of the aperitif. Also excellent with risotto and fish dishes.
