Description
The Cabernet Sauvignon Mattia of Cascina Giovinale was born in the best vineyard of the company, characterized by a splendid position on the hill of San Nicolao, in Monferrato.
This wine is obtained entirely from Cabernet Sauvignon grapes, harvested and selected manually during the second decade of October, when fully ripe. After a destemming and maceration on the skins lasting about 10 days, the product is left to ferment at a controlled temperature of 28 ° C. After the fermentation processes it is left to evolve in wooden barrels. Bottle refinement follows.
Cabernet Mattia has a ruby red color with violet reflections. The nose has a vegetable aroma, well accompanied by woody notes and hints of pepper, typical of the grape. Secondly, an intense aroma of very interesting ripe fruit emerges. In the mouth it shows an excellent balance, with smooth tannins, a pleasant silkiness and a good body. The finish is very persistent.
It is perfect with roasts, game and well-aged cheeses.
