Description
What type of wine it is
Montello Asolo Il Rosso Dell’Abazia di Serafini & Vidotto is a red wine from the Montello Colli Asolani denomination in Veneto, made from Cabernet Sauvignon, Cabernet Franc, and Merlot. The style offers an enveloping, fruity character with a warm structure supported by freshness and savoriness, designed for dishes with good intensity.
Where it comes from
It originates from the hills of Montello Colli Asolani, northwest of Treviso, in Veneto. The hilly landscape allows the grapes to ripen gradually and contributes to a profile with good aromatic intensity and solid palate, in keeping with the identity of the area’s reds.
How it is made
The grapes are exclusively hand-picked, with the harvest taking place at the end of September for Merlot and later in October for the Cabernets. After vinification, the wine matures in oak barrels for a period between 15 and 24 months, depending on the vintage and grape variety, then is bottled to complete its balance.
Tasting notes
It displays a lively and bright ruby red color, with slight garnet tinges. On the nose, it offers an enveloping, fruity profile with notes of dried red plums, morello cherries, and candied citrus, followed by hints of aromatic herbs, myrtle berries, and bay leaves, as well as dried violet and eucalyptus. On the palate, it is flavorsome and fresh, with an overall warm and persistent sensation.
Food pairing
It pairs with succulent game dishes and savory, elaborate meat main courses, where its structure and warmth are balanced by freshness. It is also a good match for aged cheeses and mushroom-based preparations, which echo its aromatic nuances.
When to serve it
Best enjoyed when a red of good intensity is needed to accompany a structured meal without losing aromatic definition. The maturation in oak suggests serving after a brief period of aeration, to best express its fruity, balsamic, and floral notes. It is an ideal choice for convivial occasions with boldly flavored dishes.
