Description
The Monthelie Les Toisières is an elegant expression of the Burgundian terroir, produced by François Mikulski with grapes from vineyards approximately forty years old, located at the entrance of the village of Monthelie, on a southwest-facing slope. This plot, once a quarry for extracting roofing stones, is now dedicated to grape cultivation on clay-limestone soils that provide the wine with finesse and structure.
The vinification takes place in tanks for about fifteen days, followed by aging in barrels for at least eighteen months. About 20% of the barrels used are new, to enrich the wine with delicate maturation notes while maintaining the integrity of the fruit and the vineyard's identity.
It presents a bright ruby color to the eye. The bouquet is refined, with scents of red fruits, floral notes, and a slight spiciness. On the palate, it expresses fine tannins, good freshness, and a balance that makes the sip harmonious and persistent, enhancing the purity of the Pinot Noir and the distinctive character of the cru.
Ideal with roasted white meats or medium-aged soft cheeses.
