Nobile di Montepulciano Asinone by Poliziano is a red wine made exclusively from Sangiovese grapes.
Where it comes from
It originates from vineyards located in the municipality of Montepulciano, the heart of the Nobile di Montepulciano appellation.
How it is made
The grapes are harvested exclusively by hand. Fermentation takes place in stainless steel tanks at controlled temperature for 20–25 days. The wine then ages in barrique for 16–18 months before bottling.
Tasting notes
It shows a bright ruby red color. On the nose it opens with floral hints of violets and morello cherry, enriched by spicy notes of bay leaf, rhubarb, coffee and cinchona. On the palate it is pleasantly tannic, full-bodied and persistent, with a coffee-accented finish.
What it pairs with
Perfect with pasta with meat ragù and roasts; also ideal with stews, game and aged cheeses.
When to serve it
Serve at 18°C, with a short aeration before consumption. Suited to special dinners with rich meat dishes and game.
