Nobile di Montepulciano DOCG Riserva TorCalvano 2011 Ambrogio e Giovanni Folonari
Description
The Nobile di Montepulciano TorCalvano Riserva was born in the estates of Tor Calvano Gracciano, where Prugnolo Gentile, the local selection of the Sangiovese grape variety, is cultivated, together with other red grape varieties, both native and innovative.
This wine is mainly produced with Prugnolo Gentile grapes - synonymous with Sangiovese - and with other noble red berried vines. The grapes are harvested when fully ripe, in the second half of October and the wine-making process takes place in the cellars of the Tor Calvano Gracciano farm. The wine undergoes a fermentation process in stainless steel tanks at a controlled temperature of 28 ° and macerates on the skins for at least 20 days. Then malolactic fermentation takes place in stainless steel containers followed by an aging period of 24 months in Slavonian oak barrels and barriques. Once bottled, the wine ages for at least another 6 months.
TorCalvano is a wine with an intense ruby red color, with nuances tending towards garnet. The bouquet has hints of violet, with pleasant notes of cherry. In the mouth it is very balanced, with a great final persistence.
Ideal in combination with meats in general, it goes well with game, poultry and roasts.
