Description
Jean-Pierre Guyon's Aux Herbues comes from plots located at the foot of the hill, in the prestigious region of Nuits-Saint-Georges. The name recalls the composition of the clay and limestone soil, an element that gives the wine distinctive characteristics. The vines, with an average age of 70 years, are exclusively Pinot Noir, a variety which finds an expression of rare intensity in this area. The aging of the wine in wood for 15 months enriches its aromatic complexity and structure.
Visually, the wine presents itself with a bright red-purple color, while the initially reserved sense of smell opens patiently to reveal a range of dark fruits such as blueberry, blackberry and blackcurrant, enriched by woody essences of cedar and incense. This olfactory complexity anticipates a persuasive, enveloping gustatory experience, a sign of a wine with an enigmatic nature and notable persistence.
Ideal companion for rich and tasty dishes, such as veal medallions with mushrooms or the classic Burgundian beef (bœuf bourguignon). Also perfect with game-based dishes.
