Description
Ca' del Bosco's Olio della Corte is an organic extra virgin olive oil, born from selected olive groves in the Franciacorta region. It is the result of careful artisanal processing, expressing the typicality of the terroir thanks to the Casaliva, Leccino, Frantoio, and Pendolino varieties, cultivated meticulously according to the organic protocol.
The harvest is done manually to ensure the integrity of the olives, which are cold-pressed within a few hours of harvesting. The milling process follows the traditional two-phase continuous cycle method, without filtration, to keep the oil's organoleptic characteristics intact.
It presents a bright green color with golden reflections. The aroma opens with fresh notes of freshly cut grass, artichoke, and tomato, accompanied by hints of almond. On the palate, it is delicate and harmonious, with an initial sweetness that evolves into a light spiciness, enhancing the purity and elegance of the oil.
Ideal for enhancing fish dishes, salads, grilled vegetables, and fresh cheeses.
