Description

Olionovo by Castellare is an extra virgin olive oil produced at the Castellare di Castellina estate, in the heart of Chianti, where around three thousand olive trees stretch over twelve hectares cultivated according to sustainable farming practices. The name recalls the Tuscan peasant tradition and identifies an oil that expresses true territorial authenticity and a strong focus on quality, obtained from a blend of typical cultivars such as Frantoio, Pendolino, Ascolane, Moraiolo, and Leccino.

The production process respects tradition, with strictly cold pressing using stone milling, followed by gentle cotton filtration. This process preserves the olives' organoleptic characteristics, maintaining the freshness and aromatic integrity of the final product.

It displays a brilliant emerald green color, while on the nose it offers a medium-intensity fruity aroma enriched with typical artichoke notes and vegetal hints. On the palate, it is balanced, with a pleasant spicy component accompanied by a slight bitterness that enhances its complexity.

Perfect raw on legume appetizers, fresh vegetables, fish and red meat carpaccio.
