Description
The Metodo Classico Brut from Castello di Cigognola is an elegant sparkling wine made from 100% Pinot Nero grapes, grown in the Oltrepò Pavese vineyards with a north-west exposure and clay marl soils. This combination of soil and climate gives the wine freshness, finesse, and a balanced taste profile. It is a refined expression of the territory, capable of harmoniously combining minerality, acidity, and depth.
The winemaking process includes manual harvesting in crates to preserve the integrity of the grapes, followed by direct pressing of the whole clusters. Fermentation occurs at a controlled temperature with selected yeasts. Secondary fermentation takes place in the spring following the harvest, with aging on the lees ranging from 18 to 24 months, enriching the wine with aromatic complexity and structure.
It has a bright straw yellow color with a dense and subtle perlage. The refined olfactory profile offers scents of red fruits, white flowers, with slight citrus and saline notes. On the palate, the tense acidity and fine bubbles provide balance, freshness, and a persistent finish with mineral nuances.
Perfect with raw fish, carpaccio, fresh cheeses, or light vegetable-based dishes.
