Description
Armilla is a Blanc de Blancs sparkling wine produced by Avondale Wine Estate in Paarl, South Africa, made exclusively from organically grown Chardonnay grapes. The vineyards, aged between 15 and 27 years, offer low yields and perfectly balanced grapes, reflecting the biodynamic and sustainable approach that guides the estate's entire philosophy.
Vinification begins with hand-harvesting the grapes in the early morning, followed by whole-cluster pressing. The must ferments spontaneously in stainless steel tanks, with a small portion aged in French oak barrels. After blending, the wine matures for 24 months on the lees before the second fermentation in bottle, where it remains for an additional 60 months prior to disgorgement.
The tasting profile is distinguished by its richness and complexity. On the nose, notes of hazelnut bread, green apple, and quince are perceived, accompanied by citrus hints. On the palate, it offers elegant acidity and a fine bubble, which integrate with a velvety sensation and an embracing, layered structure.
Ideal with shellfish, sushi or dishes based on butter and aged cheeses.
