Description
Anima is a white wine produced by Avondale Wine Estate, in the heart of Paarl, South Africa. It is made from Chenin Blanc grapes organically certified, sourced from vineyards aged between 14 and 38 years. The winery's approach is deeply tied to the philosophy “Terra Est Vita”, which emphasizes soil regeneration and environmental sustainability as essential elements for authentic and respectful viticulture.
The grapes are hand-harvested and whole cluster pressed. Fermentation occurs spontaneously in 500-liter French oak barrels, while a portion of the must ferments in amphorae and qvevri, adding depth and length to the wine. After fermentation, the wine matures on the fine lees for 12 months with regular bâtonnage, developing complexity and structure while maintaining freshness and precision.
The aromatic profile opens with notes of winter melon, pineapple, lime, and a hint of honey. On the palate, it stands out for its density and freshness of fruit, with hints of gooseberry, quince, and peach that blend harmoniously with a pronounced minerality, contributing to an elegant and persistent balance.
Perfectly paired with flavorful fish dishes, white meats, and soft cheeses.
