Description

Serapias is a Passito di Pantelleria produced by Mandrarossa, made from Zibibbo grapes (Muscat of Alexandria), grown in the bush-trained Pantelleria style on the sandy and volcanic soils of the island of Pantelleria. The grapes come from various districts of the island such as Bukkurahm, Monastero, and the Piana di Ghirlanda, each with different exposures that contribute to the complexity of the wine.

The vinification involves manual harvesting in crates, with some of the grapes left to dry for a period before being added to the fermenting must obtained from fresh grapes. Fermentation takes place in temperature-controlled stainless steel tanks. Subsequently, the wine is aged for about 10 months in steel silos and another three months in bottle.

It shows a golden yellow color, while the nose reveals intense aromas of citrus, rose, jasmine, and raisins. On the palate, it is dense and enveloping, with a perfect balance between minerality and sweetness, and a long and persistent finish.

Ideal at the end of a meal paired with almond-based desserts or aged and spicy cheeses.
