Description
Maison Ropiteau Frères' Petit Chablis originates from vineyards located on both banks of the Serein river. This white wine comes from plots situated in the higher areas of the hills or on the edges of the plateau, with brown soils derived from hard limestones and sandy areas. The altitudes range between 230 and 280 meters, with variable exposures, and the wine benefits from excellent sun exposure due to its proximity to the Grands Crus hill.
Made from Chardonnay grapes, the must is obtained from a long pressing, followed by fermentation at a controlled temperature (18°C) in stainless steel tanks to preserve the varietal aromas. The malolactic fermentation is initiated ten days after the alcoholic one and is completed in November. The wine is aged for 4–5 months on partial lees to impart roundness and complexity.
Visually, it presents a pale gold color with green reflections. The nose is intense, featuring bright notes of mandarin and white flowers. On the palate, it is fresh and balanced, finishing with a mineral touch that echoes the nature of its terroir.
Perfect as an aperitif or paired with oysters, fish tapas, white meats, and grilled or creamy sauce fish dishes.
