Description

Thou Bianc di Bava originates in the Fonte di Bricco delle Pieve vineyard, in Cocconato, in an area where clays and yellow sands give way to chalk and limestone made of white marl, called in the Piedmontese dialect thou bianc , or tuff.

It is made up of several clones of Chardonnay, some of which are the fruit of varietal research by Italian agronomists and winemakers and others from Burgundy. After pressing the grapes, fermentation of the must follows, which is clarified when cold. Subsequently the wine ages on its lees for 6 months in steel tanks.

Bright straw yellow in color, it develops characteristic hints of orange and acacia flowers on the nose, along with notes of lime, banana and honey. On the palate it is dry and broad, mineral, of great finesse: it offers its best after 2-5 years from bottling.

Ideal in the company of pasta and risotto with fish sauce, but also with seafood second courses and white meats.
